Crispy Blue is grown mainly for harvesting young crispy stalks with flower buds for eating. This fast growing plant is vigorous in producing a lot of stalks, that can be harvested by the cut-and-grow-again method. Young stalks should be picked before yellow flowers appear. First cutting can be done about 45 days after the sowing and subsequent new branches can be picked every 10 days thereafter. This vegetable is very popular for stir-fry cooking in Taiwan and Southern China. Plants are grown almost all year round in subtropical regions in Asia.
