  
Black bean is one of the most grown crops in Asia. Plants are semi-vine type, bearing small white flowers and pods with light green beans when immature that turn into black when matured/dried. There are many ways to use black beans in the Orient. Black bean is one of the important items used in making the black soy sauce with fermented soy beans, one of the most important cooking/flavoring ingredients in various Oriental cooking. Salted and fernebted black beans are also often seen in Chinese and Vietnamese cooking, used to darken sauce and add flavor for stewed fish and meat dishes.
